Mystery Coffee #2 – Colombia Tres Dragones Natural

Some coffees are named after mountains or producers. This one is named after a fire.

In 2018, three mechanical coffee dryers caught fire and destroyed the farmhouse at Potosi Farm in Colombia. Instead of rebuilding what they had, the Herrera brothers transformed the disaster into an opportunity to redesign the mill and launching Tres Dragones (Three Dragons), an experimental project dedicated to pushing the boundaries of coffee processing. The result is one of Café Granja La Esperanza's (CGLE) most celebrated microlots.

Using perfectly ripe cherries, a carefully controlled 24-hour aerobic fermentation, followed by 72 hours of anaerobic fermentation, and slow drying in a controlled environment, Tres Dragones (also name of the processing method) produces a cup that is intensely fruity while remaining remarkably clean, elegant and balanced.

This coffee is made from the Colombia variety: a cross cultivar of Caturra and a Timor Hybrid, originally developed for farmers to grow healthy coffee without sacrificing quality rather than producing exotic flavours. This coffee is exciting to us because CGLE has extracted extraordinary quality from a variety that many people wouldn't expect to shine in your cup.
